Regional Chef Trainer at andBeyond

My name is Amanda and I have an exciting job with andBeyond in Botswana. I am the Chef Trainer and Executive Chef for this region, where I implement menus and train the chefs to cook and present wonderful food in a way suited to our company and our lodges.

Botswana is an exciting challenge. For the most part, we are a landlocked desert, but we have managed to locally source a lot of our food and actively encourage local farmers to produce the freshest and the best vegetables.

Our guests love to be offered game meat and some ask to try the Botswana specialty of beef or venison seswa. This is a delicious pounded beef dish that can almost be compared to the French rillettes of pork. It is traditionally served with the local maize meal (which is like a white polenta), pumpkin and spinach.

As a company, andBeyond is very proud of the high standard of our food. It is an intense focus at all of our lodges. Over the years we have developed our own style and recipes, which we have gathered from the huge melting pot that is Africa. We are lightly spicy, fun and fabulous.

Botswana is a glorious and diverse country – desert and delta. Visitors will love the differences between each of our camps. Not only do we have four unique lodges in the Okavango Delta, but our guests also have the chance to experience the extraordinary Savute and Chobe reserves, where we have placed our Under Canvas tented camps. To enjoy nature to the fullest, for those more intrepid guests who want to see as much of the iconic destinations of Botswana as possible in a relatively short time, there is our mobile camping safari, the andBeyond Botswana Explorer, which travels by air and overland from the Okavango Delta to Victoria Falls.

One of my many favourite places is at andBeyond Sandibe Okavango Safari Lodge, picnicking on the banks of the Gomoti River. In front of me, beyond the water and grazing animals, is Moremi Game Reserve. I am sitting on a heap of cushions under a jackalberry tree. There is a wonderful picnic lunch ready and all is right with the world.
